Oatmeal Pancakes

Ingredients

  • 1 cup quick oats
  • ½ cup egg whites (3)
  • ½ cup low fat cottage cheese
  • 2 tsp cinnamon extract
  • 1 tsp vanilla extract
  • 2 tbsp strawberry preserves (Smucker’s light)

Directions

  1. Mix together to form a thick batter.
  2. Then cook in a nonstick skillet on medium heat until solid enough to flip.
  3. When finished, top with preserves and chow down.
