Ingredients

  • 1 portion whole wheat dough recipe
  • 1 tablespoon low sugar (low carb.) barbeque sauce
  • ¼ cup thinly sliced red onions
  • 3 ounces skinless chicken breast
  • to taste kosher salt
  • to taste ground pepper

Method of Preparation:

  1. Place a pizza stone in the oven and preheat it to 500 degrees for 30 minutes.
  2. Turn the oven down to 450 degrees.
  3. Roll out the whole wheat dough until it is a 1/8 of an inch thick. Sprinkle some cornmeal on the peal (a wood paddle that slides the pizza into the oven) and place the dough on top.
  4. Heat a sauté pan on high heat. Lightly spray it with fat-free non stick spray. Season the chicken breast with salt and pepper. Sear the chicken breast in the pan on both sides. Slice the chicken into thin strips. (Don’t worry the middle will still be under cooked. It will finish cooking on the pizza.)
  5. Spread the barbeque sauce evenly on the dough. Add the onion and chicken on top and slide the pizza on the pizza stone in the oven. Cook for 9-11 minutes until the crust is crispy. Cut into four slices and serve.
