Here’s a recipe created by gourmet sports nutritionist chef Chris Anderson. Chris is that rare blend of scientist and artist. There is no one better when it comes to creating delicious Results-Driven meals. These pancakes are packed with protein and good carbs (Fuel Meal). They are great when you are on the go too. You can heat them up or eat them cold. They taste great either way!
I usually eat these between clients or if I am at a seminar I opt for these rather than a bar or a shake.

Quick & Easy Blueberry Pancakes
Ingredients
- 1 cup oatmeal (I prefer gluten free oats)
- 3 egg whites
- 1/2 cup low fat cottage cheese
- 2 tsp. cinnamon extract
- 1 tsp. vanilla extract
- 20 blueberries
Method of Preparation
- Mix all ingredients except for blueberries in a blender until smooth.
- Add the blueberries and mix into the batter.
- Pre-heat medium-sized non-stick pan on medium heat. Lightly spray with non-stick cooking spray.
- Pour 1/4 of the batter into the pan until it is solid enough to flip. Finish cooking the pancake through on the other side.
- Eat them! 🙂
“Bob’s Red Mill Gluten Free Oats” If you are sensitive to gluten (and most people are) then opt for these.

Tried making these this morning – there wasn’t nearly enough liquid to allow them to blend in a blender, and even after adding a little milk, they still were not “pourable”. Is there supposed to be some water or milk in the ingredients list? Or is my cottage cheese just to thick?? Also, any reason for not including the whole egg (with yolk)? This might give them a little more flavor (slightly bland with the current ingredients).
Hey Blayne, It might be the cottage cheese. The one I use is a not very thick but then again I am not a chef. In fact, I messed them up the first 3 times I made them. Cooking is definitely a skill that needs to be developed. I am still learning. 🙂
Try this, instead of a blender put the ingredients in a bowl. Begin with oatmeal then using a fork or whisk, mix in the egg whites.
You can add 1 yolk for every 3 egg whites. Then add in one extra ingredients 1/4 cup of unsweetened apple sauce. Next add each ingredient being sure to mix it in completely before adding in the next. Let me know how it goes. Thanks Blayne!
